Grandma’s Clătite

I first got into baking and cooking when I was at my grandmother’s house. We were making Clătite, which is a Romanian crepe. She does not measure using measuring spoons, she does it by approximation. I was able to create a recipe, by matching her amounts of each ingredient with a measurement. Clătite was the first recipe I got from my grandmother, these are the following ingredients you will need. This recipe yields around like 20 crepes. 

Ingredients: 

  • 4 cups flour 
  • 1 tablespoon of sugar 
  • 1 tablespoon salt 
  • 4 eggs
  • 4 cups milk
  • ½ cup vegetable oil
  • 1 cup of water (water does vary so, you may need more)

Instructions:

  1. Pour all the flour into a large mixing bowl 
    1. Make a well in the middle of the flour but do not expose the bottom of the bowl
  2. Crack all the eggs in the well
  3. Add the sugar 
  4. Add the salt 
  5. Pour in the oil
  6. Mix that all together 
    1. Use some spoon or whisk at first, you’ll use an electric mixer later 
  7. Pour in half of the milk first (2 cups) 
    1. Continue to mix with the spoon 
  8. Pour in the remainder of the milk 
  9. Now, mix the batter with an electric mixer 
    1. Slowly increase the electric mixer speed to high 
    2. Periodically, push the leftover batter from the sides back into the batter 
  10. Add the 1 cup water and continue to mix on high 
  11. You may continue to add more water as needed — until the batter reaches a “soupy” consistency 
  12. Grab a large skillet and pour some oil into a separate bowl to begin frying your crepes
  13. Spoon some oil onto the skillet and heat over medium heat 
  14. Once the pan and oil are heated, use a ladle to spoon the batter onto the pan
    1. The batter needs to spread out across the skillet, these type of crepes are VERY thin 
  15. Thinly coat the bottom of the pan in batter and allow to sit and cook until bottom is golden brown 
  16. Flip the clătite and allow to cook on the other side until golden brown 
  17. Place the clătite onto a plate and repeat steps 13-16 until you are left with no batter 

 

Best when served fresh, top with berries, jam, sugar, or any other fruit / food you would like. 

You may store in the fridge for up to 4 days, just reheat in the microwave.
