Mexican food lover, Bill Nichols, emphasizes that balance is often misunderstood. “A common misconception is that every dish is spicy or unhealthy,” Nichols says. “A lot of dishes focus more on the flavor balance than the heat.” His secret to depth of flavor? “I like to incorporate dried chiles and Mexican oregano- it’s more flavorful and less bitter.” Nichols describes his ideal Mexican meals as starting with ceviche, followed by birria or tinga, and ending with “a flan or arroz con leche.”
Authenticity is also deeply tied to the people preparing the food. Delaney Nichols, who worked at a Mexican restaurant in high school, recalls recommending chilaquiles to customers because “the sauce was so delicious, and it felt truly authentic.” She explains that many dishes came from personal history. “These were meals my coworkers grew up eating, sometimes even their mom’s recipe.”
Beyond food, the Mexican restaurants express the importance of their culture. “It did not feel like a job,” Delaney Nichols says. “The owners’ family would stop by, and I felt appreciated every day.” She also noticed the teamwork behind the scenes, describing busy shifts as “unspoken coordination- they moved in sync without having to speak.”
Mexican cuisine is not just about the taste, but it is also about history, culture, and community. Traditional Mexican dishes are now represented as cultural pride and shared tradition. As Bill Nichols puts it, Mexican food is about honoring the past while still allowing room to experiment, connect, and enjoy.
